I never would have believed I would ever share a recipe (or even have one)
GreenPeaSalad
I would love to say this was my own but I can't.. it came from my first mother-in-law who brought it from West Texas. I have looked around the net andhave not found the same recipe anywhere.
Now I will share this recipe and then tell the story of how I was pretty much forced into trying this dish.
Okay.. Ingredients = 8oz of green peas (fresh is best but canned works too)
................................. 4oz of diced Pimientos (usually in the condiments isle of the store )
................................ .8oz of Colby Jack Cheese
............................... ..1/2 Cup of Mayonnaise
............................... ..Salt.. Pepper.. and 1 packet of Sugar in the Raw
Now.. here is the mix...
Put the Peas and Pimientos in a bowl and mix with spoon..
Put the salt and pepper in (easy kids.. less is better) sprinkle the sugar packet in
Put the 1/2 cup of Mayo in and mix real well. (should be wet looking)
Get out your cheese grater out and grate it with the fine side
I found that grating 4 oz at a time mixes better and using the fine side it isn't as dry.
Now mix it all and put in fridge for 3 to 4 hours before serving
I cover the bowl with plastic wrap to keep it from drying out..
Oh and for those who want to use pre-grated cheese, it will be very very dry and will suck..
so DON'T DO IT!!!!!!! ............................
Now, while you are cooling the salad.. Here is the story... Back in the stone age when I was dating my first wife (still one of my very best friends today) we went over to her parents house for a superb west texas BBQ filled with enough red meat to frighten off even the strongest Vegan. and when we sat down, the family put the bowl of green pea salad in front of me.. now I tried all I could to tell them that cold peas where not something that I found interesting to eat and that I would be fine with all the other foods there that started off live with parents... BUT.. they decided as a group to pretty much force feed me this cold pea and cheese mix... Well.. I didn't know it was evidently a cult kind of thing because I became immediately addicted to this mix.. and they used it against me until just a couple of years ago... whenever my ex needed a hunny doo... she would call up and say " I just made some green pea salad" and I would race out there and would only get my salad after completing a job of re-hanging closet doors or some other chore... Well... my 2nd ex never made it.. and my third made it but decided to change it before feeding it to me (she filled it with Dill) and well.. our marriage only lasted 10 months and I am pretty sure this was the reason why.. she never forgave me for hating dill in foods... and I never forgave her for messing with my addiction. So.. a few months ago I had Lynn (the first ex) send me the recipe and I have spent these few months perfecting the mix.... so enjoy folks..... and don't blame me when you are on the street, homeless, begging for cheese and peas from all who walk by....... it's not my fault... I was only answering a question on facebook. So make this at your own risk.....
